Almond Lemon Birthday Cake

As I’ve been gathering up the mismatched and hitherto disregarded pieces of my scattered brain, one thing has been steadfast which has allowed me to maintain my sanity (a little) and keep me from feeling completely incomplete. I’m talking about friends, the mere existence of them.
Some friends you make in kindergarten over chocolate-covered fingers and faces during the ever-anticipated recess. Some you happen to meet in playgrounds and day cares, instantly making you mischievous partners-in-crime. Others you grow up with, remembering everything about them from their first bicycle to their first heartbreak. Then there are those that you meet in between and along the way, that fit into and fill the deepest crevices of your heart – making you feel whole, unbroken. The ones that aren’t afraid to tell you the truth, even if it isn’t what you want to hear – for your sake and not theirs. The ones that transcend the constraints of both distance and time. The ones that you can call at practically any hour on a whim to have a drink or some ice cream, just because. I am blessed to have met these friends, amongst whom I have made a family of. And today happens to be one such friend’s birthday. Happy birthday, Joanne!

Short Ribs Burguignon

One of the most amazing feelings, for me, is that of achievement. The sheer feeling of accomplishment in and triumph over an endeavor or obstacle is what makes any challenge that much more rewarding. Oddly enough, I have to admit my biggest challenge at the moment is that of grief, or overcoming it. Like this twist on a classic French Beef Burguignon, grief can be complicated and tedious , making  anyone reluctant to confront and undertake the matter at hand. Although preparing Short Ribs Burguignon may not be as inevitable as the feelings of grief within a person’s lifetime, if you are like me and constantly seek thrill alongside self-cultivation, you can’t desist committing  yourself to making, or attempting to make, the most complicated dishes you know  to attain that blissful feeling.

That, or you try to avoid it for as long as possible until it comes back at you, smack-dab in your face. Either way, there comes a time when you need to do something about it, whether it be going out to have someone prepare that intricate and advanced dish that you obsess about and crave for or, making it yourself (for better or worse) and learning from it.

A Hop, Skip, and a Dinner Party.

Let me introduce you to a couple of my dearest friends: Kasha and Nicole (unfortunately Joanne is in California and wasn’t physically able to be with us – IheartyouJO). Now, I don’t even know where to begin telling you about these leading ladies of mine. I don’t think I could quite do them justice with words alone. They saved me from being a high school outcast when I first moved solo to this island. You know that scene in Mean Girls where Lindsay Lohan is new and eats lunch alone in the bathroom, thanks to a lack of friends? Yeah, that girl was me! Fortunately, these two girls + Joanne extended their hand out in friendship (or in pity) to little ol’ me.

They rescued me from being trampled upon by the harmful high school herd and saved me from the biting cold of potential ostracism and loneliness. I couldn’t be more grateful. Actually they couldn’t be more grateful – their stomachs, to say the very very least. Continue reading
